Meet Pj Smith of Holy Crepe Confectionery in Cypress

Today we’d like to introduce you to Pj Smith.

Pj, can you briefly walk us through your story – how you started and how you got to where you are today.
I became interested in baking when I was small, and I’d watch my dad, who at the time was really into baking. He had gotten a mixer for a gift from my mom and he quickly became familiar with it. I being young and nosy at the time, always would be nearby whenever he baked for my family.

However, my love of baking came many years later when I began High School. I was struggling adjusting to a new school as well as my own more personal problems. I began baking when one of my new favorite teachers mentioned that her marriage anniversary was soon, and I remembered that she enjoyed brownies: So as a gift, I baked her a batch and gave them to her as a gift. Experiencing the reaction of receiving the gift, as well as enjoying them, is what really ignited the flame that would snowball into my baking career and business as a whole. I realized that I loved being able to make people happy with something that I took great appreciation and care in making.

The next several, I continued to build and grow my skillset in baking. I attended culinary school and later began my dessert catering business, which you all know as “Holy Crepe Confectionery.” Over the last couple of years, I have catered not only to family and friends; But to other large functions and events as well, ranging from a 300 person plated lunch to selling my goods at a Statewide BBQ cookout.

I attribute my successes to my parents, who continue to inspire me in some way daily. I also thank my High School Theater and Musical Theater teachers, Mrs. Moore, and Mr. Kent, who both pushed me, and helped me foster my talent for baking, and always giving me advice when I needed it most. I love baking, and I started my business to spread that love to others with my baked goods. Whether it be a cookie, brownie, or an experience, there’s something for any taste at Holy Crepe Confectionery. Hope to see you all sometime! Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
More than anything, I struggled heavily with personal doubts. I have a bad habit of beating myself up when things don’t come out correctly. I pride myself on my products being perfect, and I put a lot of time and effort into finding the best ingredients possible. Unfortunately, when things don’t come out perfect in my eyes, I’d work myself up to the point to where I’d just shut down.

Please tell us about Holy Crepe Confectionery.
Holy Crepe Confectionery (Soon to be Little Black Box: Dessert Catering), specializes in simple, scratch-made desserts for anyone’s tastes. We’re infamous for our Triple Fudge Brownies and our Lemon White Chocolate Chip Cookies (as well as many others!).

I’m most proud of how, although simple, our products utilize the highest quality ingredients. All-natural, no preservatives. I also feel like this is what sets us apart from others too. We offer desserts accessible to all. It’s our Mission Statement after all: Quality Ingredients, No Frills, All Natural, Scratch-made Desserts.

If you had to go back in time and start over, would you have done anything differently?
I honestly wouldn’t trade any of my experiences, nor have done anything differently.
