

Today we’d like to introduce you to Shannen Tune.
Shannon, can you briefly walk us through your story – how you started and how you got to where you are today.
I got my start cooking in my mother kitchen. I loved being in the kitchen and I knew at an early age that I wanted to be a chef. I started working in the industry when I was 12 years old. I later went to culinary school at Johnston and Wales university. After working in some of the best kitchens in Miami, New York City, Las Vegas, Los Angelo’s, Austin and now Houston, started my own food truck, Craft Burger. I was most recently featured on Food Network’s Chopped episode beg borrow or eel and became the first Winner from the city of Houston. Since we have started the business we have opened another food truck and plan to open a brick and mortor in May
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
The food truck path is not as easy as people think. Yes, its cheaper than opening a restaurant but there are challenges such as costly repairs to the truck. Most food trucks are generally refurbished old trucks and break down often. We almost closed due to constant costly repairs. Other issues are finding good locations to park your truck. It’s not like to moves where you can just park anywhere. You have to have preapproval from the owner of the location. Most established food trucks have their “spots” and you can’t just take their spot.
Alright – so let’s talk business. Tell us about craft burger – what should we know?
I lunched craft burger food truck in January of 2016. Craft Burger is a gourmet burger food truck that uses all natural, locally sourced beef and produce. Craft burger specializes in unique burgers such as the morning after which features cheddar-bacon waffle, mixed greens, tomatoes, all-natural black angus patty, smoked gouda, crisp potato hash, brown sugar and chili candied bacon and a sunny-up egg. I’m most proud that we source our meat from local suppliers. Our meat is truly all natural, no hormones or antibiotics are given to the animal nor are they in their feed. There are few true all-natural burger places in Houston and even fewer food trucks.
Is there a characteristic or quality that you feel is essential to success?
The most important quality to our success is that we won’t give up. We always find was to get through the tough patches in owning a business.
