Meet Todd Schott of Chopin Mon Ami Catering in Galveston Island

Today we’d like to introduce you to Todd Schott.

Todd, please share your story with us. How did you get to where you are today?
I was an account executive in the marketing industry working in Houston. My mom lost her job when AT&T bought out Houston Cellular. My mom starting baking cakes for many restaurants here on the island. Then, my uncle and my mom started doing a little catering at UTMB.

My mom then called me and said, “You need to quite you job and move home”. I asked her, “Are you sure that what you want”. She said, “Yes.

So, I quit my job and moved back home to Galveston. We took over 45 different departments for catering at UTMB within six months. Also, we found the market for catering weddings in Galveston.

14 years later we have catered over 1000 weddings and 300 corporate events. We still cater many departments at UTMB and we cater 120 meals a day/7 days a week for a local head injury center.

We have won “Best of Weddings” six years in a row for “The Knot”, which is a national wedding magazine and website.

We have always remained family owned and managed. We have always waited until we made the money before we bought a new piece of equipment. Our conservative values and God has made us the company that we are today.

Has it been a smooth road?
The biggest struggles that we faced is one year after we started the catering company, there was a fire next door to us and it burned us go the ground. We lost everything. One year after the fire, we had Hurricane Ike. We had 40″ of water in our catering business and lost everything again. But, we overcame it all.

So let’s switch gears a bit and go into the Chopin Mon Ami Catering story. Tell us more about the business.
We are a wedding catering company on the island. We specialize in catering all weddings. As a full service catering company, we provide the bride with everything she needs. We are known for our service, our quality and our values. We are most proud of our quality. Our food, our service and our relationship with our employees. We are all family at Chopin Mon Ami Catering.

What sets up apart from our competition is our staff. Most of our staff is Texas A&M students that does a great job.

How do you think the industry will change over the next decade?
Our industry is always trending, shifting and changing. Gay weddings was a big change here in Texas. What are the rules for Gay Weddings? What is the etiquette? That was a change that was being written as we went.

Colors, trends in food, etc. Our industry is always changing, and shifting.
