Today we’d like to introduce you to Troy Barrett.
Hi Troy, so excited to have you with us today. What can you tell us about your story?
How I got started making sausage. A guy at work challenged me, he said since you think you can cook so good make sausage out of this deer leg. I said sure I can (I had never made sausage before) and took the challenge. Since making my first batch of sausage I’ve gained a great following of customers. My company’s name came about because I didn’t have a partner and I didn’t have any family history on making sausage God gave me the gift of making sausage and cooking, so I had to make him my partner The Lord and Barrett Sausage Co. I make a variety of sausage products. Chicken sausage, Beef sausage, Shrimp sausage, Crawfish sausage Pork sausage all of which can be made in Hot, Spicy or Mild. Also BOUDIN, breakfast pan sausage and my Signature Creole Cornbread. Now the sausage products are poised to go into supermarkets such as HEB this year.
Most recently The 26 Annual Crosby Zydeco Festival which returns on March 26 and 27, 2022 at The Crosby Fairgrounds a mixture of Great Music, Great Food and Family Fun
I’ve received numerous awards over the years most recently 2 Entrepreneur of the Year Awards in 2021 and I’m receiving an Honorary Doctorate in Humanity on December 4, 2022 from Esteem Bible College
I’m a family man with 3 girls and 2 boys and 5 grandkids.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Not by any stretch of the imagination has it been easy. God told me when I took an early retirement that it would be worth it but it wouldn’t be easy. I thought to myself I’ve got this I’ve got a few things going on, in a short period of time less than two years everything I counted on was gone which left me with my faith to rely on, In that period of time over the next 8 years I never gave up on what he placed in me, I kept on making sausage and eventually I’ve gone on to appear on the Great Day Houston with Deborah Duncan 8 times. Won’t God do it if you don’t quit???
I stopped doing the Crosby Zydeco Fest for a few years and now that I’m bringing it back it’s poised to be back where it used to be ranked as the #2 zydeco festival in the nation ranked by Jambalaya Magazine.
I eventually plan on becoming a Motivational Speaker and possible Preacher/Counselor in the future. My message is to Never Give Up put your Trust in Jesus.
Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
I started Solo Zydeco Productions from scratch in 1999 when I produced my first Zydeco Music Festival. I was determined way back then to be successful. Eventually, the zydeco fest in Crosby became available and I jumped in and took it over, renamed it The Crosby Zydeco Festival which wasn’t its original name but everyone called it that so it was an obvious choice. The name Solo Zydeco Productions came from me being a one man gang tackling the whole business of producing this event single-handedly but now I’ve learned to delegate authority to make things run more efficiently.
The Lord and Barrett Sausage Co came about because of a dare, a guy at work challenged me to make sausage out of a deer leg. I had no idea how to do it but I took that challenge and now today my sausage products are in 4 restaurants and poised to go into HEB this year.
The future is bright for both of these companies.
I’m proud of both my brands because I started from scratch on both of them creating a legacy for myself and my kids and grandkids. it’s not easy at all starting with nothing with one company let alone two companies but with that never give up spirit and attitude it’s working well for me even when I lost it all I never gave up!!!

I’m very proud of The Crosby Zydeco Fest it’s known to have visitors from as far as England and all over the United States. I’ve taken it personally to keep the Creole Culture alive with the food and music and overall good time with the roots of this music originating in Louisiana.
