Inspired by the theme of Saigon in the 60’s, Migo Saigon Food Street brings contemporary Saigon street food with noodle bowls, small dishes and the Viet coffee. We are passionate about guest satisfaction; working hard and having a good time doing it. Our care for food and environment, commitment to teamwork, and passion for a great dining experience create unique and fulfilling time for our team members. We were born and raised in Saigon, Vietnam. Most of our best eats originated from the streets. Our memories tied with the flavors of Saigon street food. We created MIGO SAIGON FOOD STREET with a mission to bring some of our favorite dishes- to you!
WHAT IS “MIGO”? MI = Vietnamese is “Mi” “Mì” is the Egg noodle or Ramen
GO = Vietnamese is “Gõ” “Gõ” is the action that knock/clap two of the tools to made a sound. Mì Gõ is the name of a type of noodle sale, whereby the seller does not sell fixedly in one place but uses the food stand or food cart to get easily to move from place to place. The sellers use their own tools to make a recognizable sound. The sound came from two wooden or metal bars hitting each other.
Usually, they have 2-4 people work at the Mi Go food stand. One of them will go around the alleys and area nearby, knocking to tools to make their special sound which make people recognize that Mi Go is selling. If the customer wants to buy the noodle, they will make order with the person who knocking around. That’s guy take order and return to the food stand to wait until the noodle bowl is made then he/she will delivery to door of the customer. Mi Go is the favorite food of the working-class people in Saigon and it has become a very cultural feature that makes people remember Saigon peacefully at night. Its noodle soup is different with our very famous Pho noodle soup.
WHAT IS MI GO MADE FROM? Pork broth NOT beef broth It’s NOT “Pho” – the famous Vietnamese noodle soup Noodle can be egg noodle or rice noodle Served with pork meat NOT to eat with pickle chilis or minced garlic
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
That was not smooth road. I planned this restaurant for two years. First of all, this is a new Vietnamese dishes in America. People just use to know Pho, Banh Mi. but not Mi-go. That’s why it was hard for us. We had to plan carefully to let people know about it. Our Mi-go is just like Japanese ramen, but have a different taste. I want to let people think this is a Vietnamese Ramen.
Migo Saigon Food Street – what should we know? What do you guys do best? What sets you apart from the competition?
What I’m most proud of my restaurant is the concept. Because I bring the street food to a restaurant. just like Ramen, it started from street food. Now, people all know about it.
What moment in your career do you look back most fondly on?
My proudest moment of my career is people now recognize us. Whenever I wear a T-shirt with Mi-go logo on it. Everyone notices that, and tell me that they really love my restaurant, they love my concept. they like the way I bring Vietnamese cuisine to another level.
