Today we’d like to introduce you to Pablo James Tello IV.
Hi Pablo, can you start by introducing yourself? We’d love to learn more about how you got to where you are today.
I’ve always had a passion for cooking but it did not cross my mind until one of my cousin’s graduation parties. You see when we have any celebration or get-together I would always offer to cook. That day a relative asked me for a tip jar. I was like no need to tip, just enjoy the food.
Personally, I just wanted to share my food one taco or BBQ plate at a time. Family is one of the main reasons I started this business. I know there is a lot of competition out there, but I embrace it and use it to make my food taste like never before.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It has been a lot of trial and error from the first market to where I am now. Each market has allowed me to continue to improve. I was in a terrible car accident that sidelined me for 7 months.
The support I received from family and friends helped me heal quicker than expected. January 28th was my first market back and it was amazing coming back. I found my rhythm quickly like I hadn’t even left- I didn’t miss a beat.
What do you like best about our city? What do you like least?
Houston is so diverse- I enjoy trying new foods from different cultures. It helps me think about how to experiment with new flavors. I think everyone will agree with me that Houston traffic is something else- it took some getting used to.
