Today we’d like to introduce you to Anna Jackson.

Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
I am a mother of four amazing boys. We are always having birthdays and celebrations. I would always try and come up with something yummy for the boys. I have always had a passion for food and the way it makes you feel. I would love seeing the big smiles on their faces when I made them something. There is nothing more satisfying than seeing a big smile on anyone’s face when you set something in front of them that you have created. 

They began to build a splash pad at a park close to our house. When I would pick the boys up from school and pass it up every day. I would think to myself; it would be amazing to have a snow cone and soft serve ice cream truck. Of course, this was just a thought, and it was nowhere near the summer yet. 

The restaurant that I was working at announced that they would be closing the doors after seventy-three years. I had not yet figured out my next venture. 

When an opportunity arose to buy a snow cone truck. It could not have come at a better time. It just felt like God had put everything in place. My son’s father came home with the good news. That we are now the proud owners of a snow cone and soft serve trailer. I got to work immediately! I started coming up with a name and logo. I went to a play that my eight-year-old was in. At the very end, all the kids made the share the love hand sign. I remembered the feeling that came over me. It was just joy and happiness. That’s when I made the decision to do Cones of love. I wanted it to have a little something for everyone not just your typical snow cones. I thought it was important to have different opinions. So, we now have over twenty-four flavors of snow cones. 

I wanted to make sure to have something for the people that might not want an ice cream or snow cone. I made a couple healthy but satisfying treats. 

We have Yogurt parfait with fresh fruit., 

Smoothies and so much more. I really wanted it to be affordable for everyone. 

I am a mother of four, so I know how much an outing with the kiddos can be. 

I love that my sons are able to work with me. We are a family-owned and operated business. 

We are very blessed to say that we have been putting smiles on a lot of people’s faces ever since. 

Can you talk to us a bit about the challenges and lessons you’ve learned along the way? Looking back, would you say it’s been easy or smooth in retrospect?
There are many struggles in the food truck business. First and foremost, trying to find good locations to work out of. It dose take time to build your brand. 

We do a lot of marketing and social media. My husband is very talented in this field. I will say this no matter what, never give up, keep pushing there is always times when God knows I wanted to just throw in the towel. 

Can you tell our readers more about what you do and what you think sets you apart from others?
I have a passion for food. My mom always told us that whatever you love to do, you will be good at. No matter if someone else does not think so. An old chief friend of mine once told me 

“We eat with our eyes first than our nose lastly our mouth.” That always stuck with me. I always try and make my food not only taste great but look amazing. 

What are your plans for the future?
We are hoping to have a storefront in the next year. I am already looking at different locations and options for the storefront. I would also love to have at least one more mobile trailer in the next year.
