Today we’d like to introduce you to Felisita & Alex Campos.
Hi Felisita & Alex, we’d love for you to start by introducing yourself.
For several years, a mobile food unit was a dream of ours. We created our first business plan circa 2018-19 in Starbucks- that initial dream has yet to come to fruition, but it lit a fire of desire and motivation. Fast forward to 2023, we were living a successful life, stuck in the daily grind. Alex received recognition for earning the company he worked for $1 million in one year, something no one else had ever accomplished for the company- that was it, a mention in the morning meeting. This was about the time Alex decided he didn’t want to make that kind of money for someone else. We started making moves to build our first food truck. A sudden tragedy turned our world upside down and it became difficult for Alex to be at work every day. Alex quit his financially secure job, cashed out his vacation time and 401k, and we poured everything we had into starting Galexy Concessions. Galexy Concessions offers gourmet concessions such as soft serve ice cream, hand-dipped caramel apples, gourmet, small batch popcorn, freshly squeezed lavender lemonade, etc. There were quite a few setbacks, but we had no choice but to persevere as we were now depending solely on this income. November 2022 our ice cream truck was ready, just in time for winter! This journey has been extremely difficult, comical, and rewarding. By August 2023, we had built a reputation for ourselves and relationships, relationships that led us to Excalibur Brewing in Old Town Spring. Excalibur Brewing gave us the opportunity to sublease from them and open up Galexy Grill inside of “Excalibur Dining Hall.” Both Galexy Concessions and Galexy Grill are operated daily by Alex, Felisita, and Karen, Alex’s mom. We receive lots of support and help from Walt, Felisita’s dad; Ava, our oldest daughter; and Christina, our niece. We are currently working on expanding the Galexy brand in a whole new direction!
Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
It’s fair to say that no part of our journey together has been easy. We often have said, “This is meant to tear us apart.”, but we actively made the choice to cling to each other and get through the hardships together. Ultimately, all of the bumps in the road just strengthened our relationship. The amount of struggles we’ve endured are countless and massive, but they’ve yet to deter us. The most difficult and personal struggle we’ve endured is starting our business just as four of our six children were taken and illegally withheld from us by their biological mother. It’s now been nearly two years of legal battles in three states, private detectives, countless amounts of money lost, and losing the children’s location for nearly an entire year, all while having no contact with these four children. We have not seen these four children since 6 PM on July 1, 2022. We have primary placement of them, and they reside with us. This vicious attack on them and us has left us with a dark and heavy weight that we carry daily, but we have no choice other than to drag ourselves out of bed every day and go to work to provide for our family and fund the fight to bring them home where they belong. Every day, we miss them and pray that they are brought home. The legal process is a slow one, especially when the opposing side refuses to comply with court orders. When we run into issues like our ice cream machine shutting down- again, electrical issues in the van, generator problems, a slow month, or our expectations of a situation drastically let us down, we know that we could become bitter and complain that “it’s always something”, but we generally choose to acknowledge that this is nothing compared to what we’ve endured and we will overcome this as well. Obstacles and challenges do eventually come with rewards and we’re always looking eagerly and faithfully towards those.
Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
Alex has worked in the food industry off and on since the age of 14. Alex has a passion for feeding people, whether it’s distributing an event’s leftovers to the homeless so they don’t go to waste, preparing Thanksgiving dinner for our church congregation, meals for his family, or feeding our customers. Alex can often be quoted saying, “I can make that.”; “Let me smell it, I’ll tell you what’s in it.”; “I’ve never made it before, but I can.” and he’s right. He is incredibly talented and soaks up every bit of knowledge offered to him. Alex has found a new passion and reward of feeding people at Galexy Grill that he’s yet to experience. Felisita grew up exposed to all aspects of self-employment and entrepreneurs. Felisita started and owned her first business at 28. Over ten years later, she’s still starting and owning businesses. We are always looking for the next opportunity; we have six children to build empires for!
Together, Alex and Felisita find inspiration for their menus in everything and from everywhere. The process typically starts with a craving or visual inspiration from Felisita, which leads to a personal request to Alex- who always delivers; this almost always ends with, “We have to put this on the menu!”.
Felisita’s favorite dessert is crème brûlée. Naturally, Alex had to be the creator of the best she’s ever had. Alex embarked on a journey to create the best crème brûlée, experimenting with different flavors and infusions. Alex’s Chocolate Peanut Butter Stout Crème Brûlée was awarded the #1 spot on Nick’s Local Eats “Top 12 Eats of January 2024”, while Alex’s Chocolate Ganache Crème Brûlée won the #1 spot in Felisita’s heart. Alex has found a new passion and love for creating Crème Brûlée, much to Felisita’s pleasure.
Can you talk to us a bit about the role of luck?
We feel very blessed to have so many of the right people come into our lives during this venture. We feel that having the mindset of “If we’re climbing to the top, we’re taking everyone with us.” is what leads to true success, not luck. We’ve discovered that there are two major types of people in the business world- there’s the “we can all succeed together” and then there’s the “every man for himself” type. We found our people in a pyramid formation, boosting and pulling each other up. Blessed, lucky, fortunate- we’re all of those. Good things happen when you try to be a good person and do the right thing.
