Erin, it’s always a pleasure to learn from you and your journey. Let’s start with a bit of a warmup: What do the first 90 minutes of your day look like?
I get up and make coffee. Then I check and answer my emails. I then write out my tasks for the day so that I can stay on schedule.
Can you briefly introduce yourself and share what makes you or your brand unique?
Hi I’m Erin. I’m a cake designer/decorator. I own the small cake business Jazz Bird Bakery based in my home in La Marque, Tx. I specialize mostly in elegantly designed wedding cakes but I also do birthday, anniversaries etc. I love cake and do mainly cake. I also set up a booth at farmer’s markets around town. You’ll find me consistently at the Galveston’s Own Farmer’s Market on Sundays.
Great, so let’s dive into your journey a bit more. Who saw you clearly before you could see yourself?
My long time best friend Kate. She was always my biggest cheerleader even when I couldn’t see it myself.
Was there ever a time you almost gave up?
This past summer was really rough on me. I wasn’t sure if all the fruits of my labor were ever going to pan out. I’m still wondering that but things have gotten a bit better.

Not to sound cynical but I always give my best and I hardly ever get feed back on it. If I’m not doing my best, why would I do it at all?
