Today we’d like to introduce you to Liz Shim.
Liz, please share your story with us. How did you get to where you are today?
I discovered that I loved creating edible art when I was first taught how to make sugar flowers as a teenager. I was absolutely amazed at how a simple piece of sugar paste can be transformed into a beautiful rose. After college, I moved to San Francisco where I attended the California Culinary Academy. There I cultivated my passion for cakes, baking and pastry arts. Then, I flew across the country to New York City to hone my skills with some of the finest cake designers in the industry. In 2009, I started Eat Cake Be Merry and spent a decade making custom cakes for NYC clients. During that time, I appeared on television shows, had my works published in numerous nationwide magazines and have won top awards. I also started teaching online classes and hosting in-person workshops worldwide to share my cake knowledge. In 2019, I relocated Eat Cake Be Merry to Houston, TX in hopes to serve this amazing city with beautiful and delicious cakes.
We’re always bombarded by how great it is to pursue your passion, etc. – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
With any business, it’s never a perfectly paved road. There are definitely highs, lows and uncertainty along the way. For most people, making cakes for a living seems like the most fun job in the world but when you turn anything into a business it’s… well, business. You have to pay the bills, market your products, work on tight deadlines and since cakes are usually for special occasions, the expectations from clients are very high. Then, you add the uncontrollable stressors like nerve-wracking deliveries, bad weather during the event (cakes hate heat and humidity!) and curious guests that always seem to want to poke their fingers into the cake to see if it’s real. But as crazy as it all is, being a part of someone’s special celebration is really rewarding and luckily my passion for creating cakes still exceeds all the challenges that come with it.

Eat Cake Be Merry specializes in custom cakes for merry occasions! Whether it is a wedding, birthday, corporate party or some other special event, I create cake designs that are completely customized and all baked from scratch. I am proudly involved in every step of the process from initial consultation, creation, to setup and delivery which is think is very important. What sets me apart from other bakers is my attention to detail and my designs, which have a clean, colorful and modern aesthetic.
So, what’s next? Any big plans?
Since I recently moved to Houston, I hope to establish my name as one of the top cake designers in this city. Hopefully, that will lead to more fun designs, exciting new clients and growth for my company. I would also love to continue sharing my craft and get people excited for making cakes, so I plan to teach more hands-on workshops for both children and adults in this area.
