My husband Brad Scarborough and I were getting married in January of 2011. We were performing in a musical theater company at The Hobby Center downtown at the time, and we were trying to figure out how we could still do what we loved and start a family. We knew that we needed to have more control over our schedules. Coincidentally around that same time my friends at Radio Music Theater were about to retire and move out of the club they’d been in for 20 years. Until last summer, I was a tenured full professor at the University of Texas Medical Branch where I have taught for 25 years. As a behavioral researcher who has studied how teams perform in extreme environments to identify the best individuals for our future long duration space missions, I have traveled all over the world and been privileged to experience many different cultures. So, when UTMB offered a phased retirement program this last summer that allowed me to take full retirement and continue to work in a part-time capacity for the next two years, I decided it was time to start my next careers. Sometime in 2008, a few health food oriented women got together to form their own personal discount buying club as a means of providing healthy, organic foods for themselves and their families. In 2010, Natural Living Store owner Lisa Piper reached out to local organic farmers, gardeners and other local food suppliers in an effort to broaden and establish a strong network of local resources. By combining the discount buying club, a couple of local organic farms and some skilled organic gardeners the Natural Living Country Store and Food Co-op was established in Lisa’s home. With no advertising budget the business quickly grew via word of mouth in the community.
